Baba ghanoush or Ganoush is made from a smoky eggplant mixed with tahini, garlic and olive oil. Baba means father in Arabic. It’s usually eaten as a dip but can also be added to other dishes. It’s great with pita bread or raw vegetables such as cucumber or carrots making it gluten free. You can make it under the broiler, or on a BBQ, even roast them, but straight on the flame is the fastest and simplest way.
